Do you remember the movie Sense and Sensibility, based on the Jane Austen book? In one scene, Miss Margaret, the youngest Dashwood sister, asks Colonel Brandon about his travels to South Asia. “The air is full of spices,” he says with a mysterious smile.
That is how I find Indian cuisine to be - redolent with spices, but something of a mystery. Many of us would like to learn to cook Indian dishes, but we may not understand the philosophy behind the many styles of regional cuisine, or what we need to know to get started.
This is where Madhu Gadia comes in. She is a cookbook author, blogger and video personality who has been teaching people about Indian cooking for more than 20 years. Rather than a chef, she is a registered dietician, and she’s based in Ames, Iowa.
I’ll talk to Madhu about her approach to Indian cuisine, including her vegan cookbook, how she restarted her business earlier this year, and about her goals going forward.
